Now that autumn is here I can’t stop thinking about summertime. It’s not that I miss the intense Texas heat or constant Gulf Coast humidity, just the opportunity to dive into a crisp, cool swimming pool on a lazy afternoon.

Sweet Paris’s pretty decor, great food, and welcoming patio make it a popular spot in Houston’s Rice Village. Plus, you can’t go wrong with whipped cream, strawberries, and Nutella all lovingly folded in a perfectly cooked crepe… ah, perfection. <3
Counter Culture—my favorite new restaurant in Austin! The former food truck, now East Austin cafe serves up some of the best vegan food in Texas. For those who scoff at vegan cuisine, let me tell ya, the good folks at Counter Culture make some of the most satisfying dishes sans animal-bits.
The menu features plentiful healthy greens (so you can get your fiber on), satisfying sandwiches, flavorful plates (such as Spicy Raw Pad Thai), and delicious decadent desserts! The banana coconut cream pie is a slice of perfection, so don’t make the mistake of passing it up if it’s on the daily menu. The cherry-on-top of all this awesomeness is their fantastic beer and organic wine menu PLUS fresh squeezed OJ, or grapefruit mimosas (served during their weekend brunch). Who knew you could eat this healthy and get your Sunday morning party-on?
For vegan-novices, the thought of “creamed nuts” might raise your eyebrow, but after you’ve had multiple fork fulls of the Cashew Cream Stuffed PB&J French Toast you’ll completely forget you’re noshing on a vegan friendly breakfast favorite. So take a walk on the wild-side (aka East Austin) and stop by Counter Culture. You might be surprised by how much you don’t miss the fur and feathers. ;)
Another drawing from my January trip to Austin. Jo’s Coffee is the perfect spot where you can sip on your latte as you observe the chaos of South Congress on a perfect morning. Located next door to the laid-back yet very chic Hotel San Jose - Jo’s offers drinks, eats, live music, and movies in the parking lot.

Last summer I created a set of conceptual drawings for my friend’s hotel. His plan is to redesign it as a dinosaur-themed property because of it’s close proximity to Dinosaur Ridge in Colorado. I produced eighteen sketches based on his initial conceptual write-up and since then he’s used my sketches for everything from talking to his local city council to sharing it with his architects. Checkout the reason why my art and the hotel is featured in The Oatmeal. It’s a pretty cool story. :)
